I have recently been converted to home-made pizzas, and like most, the inspiration comes from experiences in restaurants. Nearby is restaurant on the seafront, which is known for its pizzas and its entertainment. Tasty food and entertainment in Europe in particular, is led by the Spanish and the Italians who love to dish up a combination of the two. In Spain, particularly in Asturias, they have there own method of pouring the local cider or sidre. The waiter assumes an almost trance-like state, and pours from above his head into a small glass. Totally pointless activity – but worth watching!

The Italians love to show how good they are at preparing their dough, and how important it is to spend the time doing so. The are correct methods to consider for great pizza, according to Italians – proper preparation and oven temperature. This dough is unbelievably soft and pliable. I know this to be true, as the restaurant like to entertain by allowing people to feel the dough that will become their pizza! They are masters of the art of ‘spinning’ the dough, helping to create the familiar shape that we all know.

When fully prepared with all the toppings and trimmings, it is ready to go into the oven. You are able to smell this wonderful aroma about 10 to 15 minutes later from the oven. The nice this is that you don’t have to stay inside to enjoy your meal. If the weather is warm enough, you can watch the fun and then take your food on to the nearby beach!
