Pork Chops with Rhubarb, Ginger & Apple Chutney

For this recipe you will need:

  • 4 lean pork chops roughly 2 to 3 cm thick
  • 1 onion that has been peeled and sliced
  • Large chunks of rhubarb cut from four sticks of rhubarb
  • One cooking apple, sliced, cored and peeled
  • One squashed garlic clove
  • A small knob of root ginger which has been peeled & grated
  • Approximately a quarter of a pint of apple juice
  • 2 table spoons of soft, dark brown sugar

It is an extremely easy recipe to prepare. First season the pork and preheat your grill or griddle to a moderate level.

Once this is hot enough to start cooking, put your chops on. They should take roughly 8 to 10 minutes on each side depending on how thick they are.

While the pork chops are cooking you can make your chutney.

Put your ingredients into a small pan. The ingredients should be left to simmer for about five minutes until the fruit is nice and soft but has not yet become overly mushy.

If your timings are spot on then you should be able to serve your meat and your chutney at the same time.
